Feasting in Louisiana
Here in Louisiana, we make a kind of
religion of cooking and eating and drinking,
as if the joy of creating and tasting such amazing food
were a kind of tangible proof that God's in his heaven and
all's right with the world. So when you have guests in Louisiana it
would be a kind of sacrilege if you
failed to delight them with feasting.
Well, that's no problem.
Whether you want a light luncheon (deep-fried softshell
crabs on toasted french bread with all the fixings
followed by melt-in-your-mouth bread pudding) or
a crab boil (crabs and crawfish boiled in a hot spicy boil
with corn, potatoes, and, if you like, some ham hocks,
turkey necks, or baby back ribs) or a full six course
Louisiana feast with wine for each course, we can make it happen, on
a barge in the marsh or swamp, or on
our tugboat, or in a more conventional setting.
